Led by Executive Chef Nguyen Minh Phuc, the restaurant offers a refined journey through Italy’s culinary heritage within the peaceful setting of the resort’s Pebble Clubhouse.

The à la carte menu celebrates timeless Italian cuisine, featuring oven-baked pizzas with crisp, airy crusts, handcrafted pasta, and premium cuts of meat. Inspired by the diverse regional flavors of Italy, each dish takes diners on a sensory voyage, from the delicate sophistication of the North to the bold richness of the South, and the refined artistry of Florence. Every recipe is guided by authenticity, purity, and ingredient excellence.

With a passion for sustainability and contemporary gastronomy, Chef Phuc has infused Mamma Mia’s philosophy with the principles of boat-to-table and farm-to-table. Fresh seafood is sourced daily from local fishermen, ensuring dishes like the signature seafood pasta remain vibrant and true to the natural essence of Nha Trang Bay. Locally grown tomatoes, basil, and sage are thoughtfully paired with imported cheeses and cured meats to create plates that capture the heart of Italian cuisine while embracing Vietnamese terroir.

“We don’t aim to compete with the traditional trattorias of Rome,” Chef Phuc shared. “Our goal is to bring the soul of authentic Italian dining to Hon Tre. Every pizza is baked at over 400°C for that perfect charred crust, our pasta is handmade daily, panna cotta follows a time-honored family recipe, and our wine list is curated from Italy’s most celebrated vineyards. We want guests to feel as if they’re dining along the Mediterranean: warm, lively, and full of joy.”
